Ann Powers This week's Eat Well is really a Drink Well. Lavender lemonade is a refreshing spin on the classic summertime favorite. Make a batch, chill and enjoy on a hot day or over the Memorial Day weekend with friends and family! Makes four servings. Ingredients 1 cup freshly squeezed lemon juice (Meyer lemons are preferred) 4 cups water divided 1 cup honey or maple syrup/other sweeteners 1 tablespoon dried lavender flowers ice lemon slices and fresh lavender flowers for garnish Instructions Add two cups of water, the honey and dried lavender to a small pot. Bring to a simmer over medium heat and stir to dissolve the honey. Once the honey is dissolved, turn off the heat and let the mixture infuse for 30 minutes. Pour lemon juice into a pitcher. Strain the lavender mixture through a fine mesh sieve into the pitcher with the lemon juice. Pour two cups of cold water (more if desired) into the pitcher and stir together. Add ice and lemon slices. To serve, pour the lavender lemonade into glasses with ice and garnish with fresh lavender blossoms. NotesAdjust the amount of honey or other sweetener to your liking.
