EAT WELL: Honey Lime Chicken

Ingredients:

  • 1 lb boneless, skinless chicken ponded to 1/2 – 3/4 inch thickness
  • 3 tsp lime zest
  • 5 tbsp honey (preferably local)
  • 1 tbsp avocado oil
  • 4 cloves of garlic, minced
  • 1/2 tsp pink salt
  • 1/4 tsp black pepper
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • 4 tbsp cilantro (minced)

Directions:
1. Pound out your chicken and place in a freezer bag
2. Combine lime zest, lime juice, honey, garlic, pink salt, pepper, chili powder, cumin, cilantro and oil in a bowl. Whisk together.
3. Pour mixture in the freezer bag with chicken. Marinate for at least one hour. For better results marinate overnight.
4. Remove chicken from fridge and bring to room temperature, while you ready pan/grill plate. (I like the grill plate best). Using avocado oil, oil the grill plate.
5. Remove chicken from bag and marinate to plate. Add chicken one piece at a time to grill plate.
6. Grill over medium heat, five minutes per side, or until the chicken is browned and fully cooked. Let the temperature reach 165° on the inside. Watch closely while grilling, to not burn the honey marinate. If the mixture begins to burn, lower the heat.
7. Remove the chicken from grill plate and let rest for 4 to 5 minutes, to let the juices distribute.
8. Enjoy!
